S’mores bars

I don’t know about the weather where you live but here in East Tennessee it is hot! It’s so hot the boss has said we can’t have a bonfire, which means no s’mores. The night he declared no bonfire we were entertaining so I decided to make a new dish - s’mores bars.
These bars have all the traditional ingredients - marshmallows, graham crackers and chocolate bars - and are ooey and gooey enough for kids to love them. And they are easy to bake and serve without standing over a hot flame outside.
I’m not claiming these to be healthy - they’re definitely a treat for a summer party. But I’ll make them again for sure. I already know they’ll be a hit for Marshall’s back to school bash next month (yikes! It’s already July) and so will take them to that party. And really I’m thinking they’ll be a safer option than unsupervised s’mores anytime (kids unsupervised with a large fire ALWAYS makes me nervous).
So if you’re like me and want to make s’mores but not sweat or smell like smoke, hear you go! My s’mores bars:
Aliceson’s ooey and gooey s’mores bars
Makes 12-15 servings, depending on how you cut them
2 cups graham crackers crushed by hand (or in a food processor) - they don’t need to be uniform in size
2 cups all purpose flour
Pinch salt
3/4 cup butter, melted
1 -1/2 cups brown sugar
2 Bales Farms eggs
10 ounces marshmallows (I used the size I would have for s’mores by the fire but I think any size would be fine, and you could probably also use the same amount of marshmallow fluff)
4-5 Hershey bars to lay on the base layer
Preheat your oven to 350 degrees and prepare your 9x13 inch pan (I used Parchment paper here).
In a bowl combine the dry ingredients - crushed grahams, flour and salt.
Using a mixer, mix the butter and brown sugar until combined (about 2 minutes) and then add the eggs. Once mixed, combine the salt, flour and graham crackers. Don’t overmix this part - just until they’re all combined and you don’t see any clumps of white flour.
Divide the dough into 2 balls - one bigger than the other (about a 60/40 split). Using the larger ball of dough, press into the bottom of the pan and flatten with your hands or a spatula.
Cover the dough with the chocolate bars and then the marshmallows.
Place small bits of the remaining dough on top of the marshmallows until you’ve used it all (you’ll see the marshmallows for sure).
Bake for 30-35 minutes at 350 degrees until the bars are golden brown. If you want the marshmallows toasted turn on your broiler for just a minute or so (watch so they don’t burn!).
Cool and cut into bite-sized servings.
I will say these are easier to cut once they’re a little cool so you could even pop them into the fridge for 15 minutes or so.
These are great to make ahead of your party time also.
