Cookie Time!

To me August seems like a return to adulting. School starts, and even if you’re not in school or have a student in your family, it’s like an end of summer. Vacations end, travel slows down and everybody returns to their routine. Which, let’s be honest, isn’t tons of fun.


Which is why I think now is the perfect opportunity to share my chocolate chip cookie recipe. Because everybody deserves a sweet treat!


These cookies are pretty easy. I dump everything in my mixer and let it go, then put on a baking sheet to cool and bake on the same sheet. They don’t take long and for sure the hardest part is waiting for them to cool. This recipe makes a ton of cookies (even big ones!) so you’ll have some to share with your neighbors! Or not. Whatever. No judgment here.


The Best Chocolate Chip Cookies I’ve Ever Made

hands-on time 15 minutes

total time 90 minutes


2 sticks melted butter

2/3 cup granulated sugar

1 cup packed brown sugar

2 Bales Farms eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon salt

3 cups all purpose flour

2 cups milk chocolate chips

1 cup chopped chocolate bar OR mini chocolate chips


In a stand mixer combine sugars and butter and mix until smooth. Add eggs and vanilla and mix.

Add flour, baking soda and salt until all is mixed.

Add chocolate chips and/or chopped chocolate and stir until combined.

On a lined cookie sheet (I use 3 cookie sheets), scoop out dough with a 2 tablespoon scoop and then cool for one hour. (I know, I know, but when you’re using all butter and no oil this makes a huge difference in the finished product. I promise!)

Heat your oven to 375 degrees and bake cookies on the lined sheets for 10-13 minutes. When the cookies are slightly less than golden brown and have some resistance when you touch the tops they’re done. Take them out of the oven and cool.

If you want, while they’re cooking, sprinkle with coarse sugar or salt, depending on your preferences. I used the coarse sugar and everyone LOST THEIR MIND. So obviously I do that most every time.


That’s it! They’re simple and straightforward and I cannot describe how yummy they are! And listen, I know, they have a lot of sugar and butter, but come on, you’re treating yourself!! So enjoy this. You deserve it!
