Blackberry (or any berry really) Muffins

Wait, what? Healthy muffins that are easy to make and so versatile you can change them to use whatever fruit you have in the fridge, freezer or on your shelf?

Yep! They’re that easy! From start to finish you’ll have fresh, homemade muffins that are healthy-ish in less than 30 minutes. They have fresh fruit, milk, yogurt, protein and will be gobbled up by kids and adults alike. (Guess how I know?)

I make these muffins every week and I’ve shared the recipe for these muffins at least 1,000 times. Here’s 1,001. They’re great in the summer when there are more relaxed schedules and everybody wakes up at different times and they’re easy and filling enough for school days when you’re running out the door and need something you can hold in one hand.

Aliceson’s easy muffins

Makes 8-9 muffins


1 1/4 cups all purpose flour

2/3 cup sugar

1 teaspoon baking soda

Pinch salt

1/2 cup vanilla yogurt

1/2 cup oil of your choice

1/3 cup milk

1 Bales Farms egg

1 teaspoon vanilla (I have been known to substitute almond or lemon extract)

1 cup of berries (blackberries, blueberries, raspberries, strawberries work well as do diced peaches and diced mangoes - I told you I’ve used every kind of fruit I have on hand. I’ve even combined fruit when I haven’t had enough of one.)

Sprinkle of raw sugar for topping

Preheat your oven to 375 degrees. Prepare your muffin pan however you’d like (spray, rub with butter, whatever). Mix the wet ingredients in a medium bowl and then add to the dry ingredients, being careful not to over mix (over mixing tends to keep the muffins from rising so much - see my picture 🤦‍♀️). Gently fold in the berries you are using. Spoon into the prepared muffin pan and top with a sprinkle of raw sugar on the top of the muffins.

Bake at 375 degrees for 20-25 minutes until golden brown and the muffin bounces back when pressed gently on the top.
